A clafouti is more like a monster crepe with fruit. You make a batter akin to a crepe batter and pour is over fruit. I mostly do cherry clafoutis with amaretto. Or pear and ginger clafouti. Clafoutis work best with soft fruit.

I baked an apple crisp the other day and it was fine the first day but the 2nd day the crumble had turned to stone ... what happened there?

Kalua pork in the slow cooker. Pork shoulder + salt + liquid smoke. Kalua pork sliders, pork quesadillas, pork fried rice, pork enchiladas, cubana sandwiches ... and it freezes and defrosts well, too. And it makes people so happy.

My favorite grade school hot lunch was bologna boats -- fried bologna, with a scoop of fake mashed potatoes, with a slice of melted American cheese on top. That's some good eating right there.

There was no lunch or cafeteria in junior high ... I had to make do with my jelly sandwich on white bread in an empty bread sack.

High school was the best with wienie wraps and hamburgers. I had no money but my best friend's mother was a cafeteria lady! Score!!

Now I make excellent lunches and buy all the things I was denied as a child. My coworkers think I'm nuts but that's the beauty of being a grown up ... you can do what you want.

I plan four or five meals in advance on the weekend and shop once a week. I'll make a list based on six or seven meals and cut it down to four or five at the store when I see what's available. I also do a large pantry order once a month that gets delivered. I leave the proteins up in the air until I get to the store to take advantage of what's on sale ... and if there's a really good deal I'll buy three or four and freeze it. I try and leave enough flexibility to account for change of plans and at the end of the week I clean out the fridge and make a frittata or soup with everything that needs to get used up. I'm on keen on frozen meals so the only thing that gets frozen is meat.

I hate poached fish but love broiled or roasted fish. And add a fresh fruit salsa ... mango or pineapple or peach ... yum. And I love salmon with barbecue sauce. And parmesan and panko encrusted halibut or haddock. I love trout and those you can just dredge in cornmeal and fry.

Last night I made chicken lettuce wraps and did it easily in 30 minutes. I don't think it's unreasonable. A hot stove cooked onions and chicken in short order, put the sauce together while the onions and chicken are cooking, throw in the sauce, let it bubble a couple of minutes, shut off the heat, throw in the (bagged, preshredded) veggies and throw on the lid. By the time I got the lettuce washed and spun and the table set it was ready. Of course I'm only cooking for two so that probably helps, eh?

My favorite emergency dinner is tortellini. I buy fresh tortellini, freeze it, and it's ready for tortellini salad, tortellini primavera, or a quick soup by cooking all the odds and ends in the fridge and tossing in the tortellini. Other than that I always keep my pantry stocked with rice, beans, tomato products.

I meal plan and shop once a week and usually stick to the plan. Produce left over at the end of the week goes in a soup or a frittata for the weekend. The only stuff that always, always goes bad before I can use it all are fresh herbs.

I think Graham Kerr was the first person I saw on television who actually made things from scratch. My mother was an "open a can" cook. I also like Rachael Ray ... her food is very approachable and my attention span is only 30 minutes apparently. She opened my eyes to a new of new foods.

"Tastes of sadness" ... snort ... that's funny! I like dino kale in soups and mashed potatoes ... I can't eat mashed potatoes without kale anymore. Kale salads don't really work for me. I only like kale cooked and I only like spinach raw. But I think dino kale has a lot more flavor than curly kale. Maybe it's curly kale that tastes like sadness?

I can't do anything and I can make a pie. I've never baked a cake in my life but I can make a pie. I use butter because I usually have butter in my house. I usually do one crust pies because they are easier. And then do a crumble on top (brown sugar, oatmeal, flour, and more butter). I like cooking my fillings because I like ooshier fillings. Trust me, you can make a pie!

Braised greens and chickpeas with coconut milk ... I think I got the recipe here ... only I use kale instead of other greens because the kale holds up to the long cooking time. I prepare everything the night before and fire it up before I go to work. It cooks on high for 6 hours and then shifts to the warm setting.

Also curried lentils with butternut squash.
