For Christmas Eve dinner, I made brisket, slow-roasted salmon, crispy roasted potatoes, spinach gratin, corn pudding, roasted brussels sprouts with bacon and spiced apple bread pudding with caramel sauce. I baked raspberry and coconut thumbprints, chocolate-hazelnut and chocolate chip cookies and almond bread as edible presents for family and friends. Christmas morning was pecan sticky buns. When people ask me what I got for Christmas, I tell them I got fat - that's what I got for Christmas!

We're using TinyPrints and their online RSVP service for my daughter's second birthday. We've received one "snail mail" invite RSVP and a couple of digital invite RSVPs. I thought we would receive RSVPs from the digital invite set almost immediately, but alas, everyone is still lagging. I even texted the digital invite bunch and told them that the invites were sent and to please check their Spam folders in case they went there instead of their Inboxes. Maybe it's the fashionably late thing going on here, also? I agree, it's annoying.

I plan a menu for the following week, shop on Saturday and cook and prep items on Sunday. Main entrees get reheated for dinner and veggies cooked the day of, throughout the week. We have roast chicken once a week as it is one of my daughter's favorite meals - I brine the chicken and prep brussels sprouts (the usual side dish) on Sunday, throw both in the oven usually on Tuesday or Wednesday for a quick, healthy and delicious meal. And like @pearmelon, I also make enough to take as leftovers for lunch for my husband and I the following day. Not only does everything gets eaten up, we don't have random items spoiling in the pantry or fridge, we end up eating healthier and saving money because we cut back on take out meals and evenings are less harried for me, a mom of a 2-year-old toddler with a husband who works late all the time.

I've found that 1 to 2 TABLESPOONS of molasses results in a very dark brown sugar. I made oatmeal lace cookies using the above recipe and the cookies did not turn out as they should have - too much molasses flavor and quite chewy. In my opinion, 1 to 2 teaspoons is perfect for light brown sugar and 1 TABLESPOON for dark brown sugar. Maybe it's the kind of molasses I'm using, but I think the proportions listed above are a bit off.

It's all about using up more calories than what you take in. If you have a smart phone, I've found that tracking calories using an app called MyFitnessPal (it's free) very helpful. They have the nutrition information of practically every food in their database (and if they don't and you do, you can add it yourself). It's very easy to use. With that, healthy eating and some exercise, I would say you'd be all set.

it says to dip them in milk with food coloring to color them then place them in a baggie overnight to soften - any concerns with the milk dip and being left out at room temperature?
