so far all I've done with the cukes is throw them in my salads for lunch or cut them up and eat them with hummus! The zucchinis and summer squash I made a kind of baked egg dish with them that turned out well.

What do we do with Broccoli raab? we tried the kale/beet green/ collard green method of just sautéing with some olive oil and lemon juice but they were very unpalatable.

Yeah I just vote, don't scale them down. If it's anything that puts a lot of effort in you might as well make the whole batch and have leftovers for lunch or freeze some for a busy night.
