I have used the plastic oven baking bags for years, and it's basically "no-fail turkey time." I brush butter over the bird, under the wings, etc. Just at the end of baking, I split open the bag to reveal the bird, and turn on the broiler for a few minutes. The turkey comes out beautifully golden. I use the exact same process when I roast a chicken. You don't have to be tied to the kitchen monitoring and basting...just pop it in the oven and forget about it until the timer goes off. This process is such a sure thing that I've been confident enough to make turkeys for our free community Thanksgiving dinner. No stress and no sweat.
