I love Chia seeds, I mix them in yogurt every night. @ cupofrimbus, I totally can understand the texture issue as I actually like them for the texture but can see many not enjoying that. I like them to absorb some of the liquid but also retain a little of the grainy crunch texture.

I love chicken sausage and use it quite frequently. My favorite go tos are Whole Foods which has a wide variety of freshly made chicken and turkey sausages at the butcher counter as well as Trader Joe's. I really like the Trader Joe's roasted garlic sausage. Wegmans also has a few good ones including a mushroom porcini herb and breakfast sage.

I'd recommend USDA/nutritiondata.self.com and I use a spreadsheet system. You can list each ingredient and the components you are interested in then weigh the whole bunch and divide as appropriate.

I use nutritiondata.self.com and log on LiveStrong My Plate. To calculate entire meals I weigh each ingredient and add the calories. If possible, I weigh meal afterwards and divide it into a particular amount and then use the total calories/#servings. If it weighs 500 grams, and I divide into 100 gram servings then I just calculate total calories/5. It's pretty quick once you get the hang of it.

Just to clarify - is brown butter considered clarified, as in do I remove the brown solids or is that the flavor? I attempted to make brown butter ahead of time to use for steak and when chilled in the refrigerator it turned into an interesting frothy mess. What's the best way to store it?

This "recipe" is great! I seeded the zucchini beforehand and it was a hit! I'm wondering, does anyone have any things they add for variety? This is so simple it's like a compound butter, just perfect for doing a lot with different ingredients.

I agree, drain salmon, put on a plate, no mayo needed here, grab a few lettuce leaves, some pickled peppers and onions, maybe some avocado slices and eat up.
