I love green beans in the summer! I like to blanch them and throw them in potato or pasta salads (not the gloopy mayonnaise kind!). There's also an Ottolenghi recipe I love which is green beans with orange and hazelnuts I think.

I think it's great that ideas are coming out for more eco-friendly food packaging. As much as I try and skip packaged convenience products, buy loose market produce and buy pantry staples in bulk by taking along my own containers to the store, it's just not possible to be 100% packaging free.
We have a great company here in the UK that produces raw, vegan snacks and I gather they created the world's first biodegradable packaging! Definitely the way to go!

Lizzie, what do you usually eat for breakfast? Dairy is pretty easy to sub, especially since there are so many alternatives available these days. Try almond, hazelnut, rice, coconut or oat milk. You can even get almond and coconut yogurt too. They're delicious too!

We don't have all these varieties in the UK! It's pretty much just silken or regular. I guess pressing the regular kind at home gets it closer to your "extra-firm" stuff.

Make soup is often my answer! I might be bored of a veggie chili one day but I'll blend it up and change it a little with a fun avocado cream topping or serve it with some baked tortilla chips instead of rice for a change.
Instead of blending, sometimes I'll just make a quick miso broth and throw in that last cup of cooked grains and remaining veg hanging out in the fridge.
