sigh, fine, I feel like I've read enough of these posts to guilt me. My secret ingredient is dry vermouth. I add a little bit to sauces, stews, soups, etc. I deglaze pans with it, i finish almost everything with it. I come from a martini drinking family, it's always on hand, it's cheaper than wine, and you only need a little bit.

leftover bones, the remains of old frozen stocks i had made and forgot about, typical carrots, celery, onion, garlic, potato, bay leaf, i added a aged gouda cheese rind. Finished it off with scallions, carrot greens and a little bit of soy sauce over plain kosher salt.
