Coconut cream is definitely the most decadent and will give you that "colada feeling" - the others are lighter, especially the water.

The dough is slightly floured from the shaping and proofing, it has always been enough for me to make it not stick. If the pan is preheated sufficiently you shouldn't have a problem.
