Here's an easy trick I recently learned to help create a more uniform looking egg, no straggly edges. Before lowering the egg into water, crack the egg into a small
strainer and shake lightly. The watery part of the white will drain. You can now lower the egg into the water and you will notice a much more attractive poached egg.
