I tried roasting Turkey for the first time on New Years Day...and it turned out perfect. I bought a 12 lb. frozen turkey and left it in the fridge overnight and finished thawing it out under cold water in sink for about 3 hours. Then brined it by placing it in a large canning Pot over night w water, Kosher salt, herbs and spices. Drained it, stuffed with fruits, vegs, garlic and herbs.
