I tried roasting Turkey for the first time on New Years Day...and it turned out perfect. I bought a 12 lb. frozen turkey and left it in the fridge overnight and finished thawing it out under cold water in sink for about 3 hours. Then brined it by placing it in a large canning Pot over night w water, Kosher salt, herbs and spices. Drained it, stuffed with fruits, vegs, garlic and herbs.
I then squeezed soft butter mixed with spices between the skin, than covered the outside of the turkey with extra butter salt and pepper. Poured 3 cups of chicken broth in bottom of pan. Set the temp to 450 for about 25 min, then reduced to 350 and covered w tinfoil and set for 3 hrs. After 2 hrs basted the turkey w butter. After 3 hrs checked the temp of the breast, uncovered turkey and cooked for another half hour until perfectly done. Took out of oven, covered w foil and let sit for another 30 minutes before carving. It was a lot easier than I expected and tasted great! Good Luck! I enjoyed reading the other comments.
