My boyfriend is big on 'meat & potatoes' for every meal, so when he is gone I make sure to load up on veggie based meals. My favorite is big salad w/ every vegetable I can find & a plate of bruschetta. If it's during the winter, there will for sure be a big pot of vegetable/minestrone type soup on the stove.

Making a few servings of brown rice & chicken make a huge difference for my family. Just from those two things I could make salads, stir frys, soups, casseroles... it really helps cut time & force me to use them up vs. ordering take out when I am tired.

If possible, I always like to use both sides of a long table so 2 lines (on each side of the table) can be formed. You do have to use 2 sets of each serving tool, but it helps the line go quicker for the guests. Please note: You will need to be prepared to bring the extra food out quicker if you do this method.

1 pack of vanilla Greek Yogurt + 1 Cup of frozen berries (whichever kind you want to use) + 2 TBSP of honey in the blender. Blend well. Freeze for an hour. Then enjoy your new healthy ice cream!

I almost always have canned chicken stock, canned tomatoes, basic veggies like celery, onion, peas and carrots, and small pasta on hand. Therefore, I almost always make a form of minestrone. Sometimes it has meat, sometimes it doesn't. Sometimes it has zucchini, other times I use frozen peas. It's so easy to customize and the broth turns out really well when you slow sauté chopped onion, garlic and add a can of fire roasted tomatoes THEN add the can(s) of broth. Served with shaved parmesan and crusty bread, it's the best meal!
